What is the relation of sepsis, depression and dementia disorder to Pureed diet?

Why do elderly patients with sepsis, depression, and dementia need to have regular pureed consistency on their diet? What is the relationship of this diet to disorder?

these will help stabilise / reduce / control their disorder. digestion is simplified n no pain, hence less trauma
