Does anyone have a recipe for snacks or desserts for someone with lupus?

Someone dear to me has lupus and is on a new diet plan. I wanted to bake her something but it cannot include oil, butter, flour, or sugar ( Splenda is fine). Can someone please help?!? An Oatmeal cookie recipe is ideal.

I used to make these cookies for my diabetic elderly aunt. She really loved them and they’re very healthy:
3 ripe bananas- mashed
1 cup chopped dried fruit (raisins, apricots, prunes- anything you like)
2 cups rolled oats
1/3 cup applesauce
1 tsp vanilla
1 tsp cinnamon (if desired)
Combine all and let sit for 20 minutes. Drop teaspoonfuls on greased baking sheet, flatten, and bake 15-20 minutes at 350 or until set.
You don’t need splenda since the bananas and fruit provide sweetness.
These will keep at room temp for 1-2 days, but are best in the fridge (and they can be frozen).

try this one on — one container of cool whip light, one 6 oz container of yogurt (you favorite flavor), one package of jello of like flavor (sweeten) mix all together and pour into a bought pie crust add more cool whip to top and top that with fresh fruit then chill for at least an hour and serve cold — my father was diabetic and this one was one of his (and the rest of my family’s) favorite desert
as for oatmeal cookies we also like this one — cook your oatmeal until it congeals then add a sugar substitute and raisans or some other dried fruit pat out into cookies and bake at a very low temp. untill done make a thin splenda and water paste and pour or drizzel on top

Did her doctor put her on this diet? You are asking for a cookie recipe without the basic cookie ingredients. However, you could melt unsweetened Bakers chocolate (althought it does have cocoa butter in it), add Splenda to taste, and stir it with quick cook oats. Drop by tablespoons full onto a non-stick cookie sheet. Cool.
I can’t imagine a really healthy diet that includes artificial sweeteners.
I have lupus with organ involvement. I eat a primarily vegetarian diet and avoid processed foods as much as possible.
Rather than fake cookies, why not make a nice fruit crisp? You can avoid oil, butter, flour and sugar with that. Try http://www.foodtv.com.
Oh and encourage the lupus patient to get some reliable information.
